RASPBERRY CHEESE ROLLS RECIPE

Ingredients:
Dough:
560g Flour
100g Fine Sugar
1 tsp Salt
2.5 tsp Yeast + 1 tsp Fine Sugar
240g Milk
60g Warm Water
1 Egg
80g Melted Butter
1 tsp Vanilla Extract
Spread:
80g Softened Butter
30g Sugar
Filling:
250g Softened Cream Cheese
50g Fine Sugar
1 tsp Vanilla Extract
1/4 tsp Lemon Extract
Raspberry Filling
Method:
1. Combine warm water, yeast and 1 tsp sugar. Leave to bloom for 10 minutes.
2. Add yeast mixture yo a stand mixer then add milk, flour, sugar, salt, egg, melted butter and vanilla extract. Mix for 10 minutes or until you get a smooth dough.
3. Place in a greased bowl and proof for 1 hour or until doubled in size.
4. Flatten the dough and roll out into a rectangle. Spread butter and sprinkle with sugar.
5. Combine cream cheese, sugar, vanilla and lemon extract. Spread on the dough, followed by the raspberry filling.
6. Roll from the long end into a tight roll. Cut into 16 pieces and lay in a 12"x12" baking pan. I made two 8"x8" and split the dough into 18 rolls. Cover and rise for 45 mins or until doubled in size.
7. Bake in a preheated 170°C oven for 30 minutes. Cool slightly before serving.
