Digestive biscuit 375g
Brown sugar 30g
Honey 30g
Melted butter 135g
Cinammon powder
Process
- Crush cookies with rolling pin
- Add brown sugar, cinammon powder, honey + melted butter mix evenly
- Press about 180g comb per cake tin 6"for cheesecake base
For 2pax
Cream cheese 700g (C)
Sugar 150g
Eggs 250g
Whip cream 150g (B)
Lemon Juice
- Cream cheese + sugar till smooth
- Add eggs 1 by 1 will well incorporated (no lumps)
- Whip dairy cream till soft texture (soft peak)
- Fold in lemon juice till well incorporated
- Pour in to prepare tin (with the cookie base) (cheese batter 500gm/cookie butter 180g)
- Place tin in water bath
- Steam bake 140C about 50-60mins
